Seguramente muchos se imaginaron sentados en una mesa comiendo un delicioso corte de Carne<br \/>\nAmericana reci\u00e9n salido de la parrilla, pero esas no eran mis expectativas. Voy a empezar por los cortes que eleg\u00ed y c\u00f3mo los prepar\u00e9:<\/p>\n<p>Lo prepar\u00e9 como si fuese un cl\u00e1sico Prime Rib, lo cubr\u00ed completamente con una mantequilla de hierbas y lo refriger\u00e9 por 12 horas. Luego lo cocin\u00e9 en un horno a fuego fuerte los primeros minutos hasta selllar y despu\u00e9s m\u00e1s bajo, a fuego suave, hasta llegar a una temperatura interna de 60\u00b0C. Guard\u00e9 hasta la \u00faltima gota de sus valiosos jugos, sab\u00eda que ser\u00eda el complemento perfecto el d\u00eda del evento, lo enfri\u00e9 y cuando estuvo a 2\u00b0C lo lamin\u00e9 muy, muy, delgado. Voy a empezar por los cortes que eleg\u00ed y c\u00f3mo los prepar\u00e9:<\/p>\n<p>Lo prepar\u00e9 como si fuese un cl\u00e1sico Prime Rib, lo cubr\u00ed completamente con una mantequilla de hierbas y lo refriger\u00e9 por 12 horas. Luego lo cocin\u00e9 en un horno a fuego fuerte los primeros minutos hasta selllar y despu\u00e9s m\u00e1s bajo, a fuego suave, hasta llegar a una temperatura interna de 60\u00b0C. Guard\u00e9 hasta la \u00faltima gota de sus valiosos jugos, sab\u00eda que ser\u00eda el complemento perfecto el d\u00eda del evento, lo enfri\u00e9 y cuando estuvo a 2\u00b0C lo lamin\u00e9 muy, muy, delgado. Procur\u00e9 tenerlo a termino medio 62\u00b0C, as\u00ed que acab\u00f3 en el horno con una bandeja de agua para que aporte humedad, recordemos que el lomo de cerdo es magro y procuraba no secarlo. La idea ser\u00eda servir todo sobre una gran mesa: las carnes separadas por variedad, los panes abiertos, las salsas en sus bowls y que la gente se arme su sandwich a elecci\u00f3n.
