Pensemos en un caso bien gr\u00e1fico como el del lomo: adem\u00e1s de obtener los cl\u00e1sicos medallones tambi\u00e9n podremos destinar una cantidad importante de esa carne para carpaccios, tartares, cubos para brochetta, molidas para entradas, salsas, rellenos para pastas, s\u00f3lo por nombrar algunos ejemplos.
